I’m planning to open a bunch of YouTube channels—like 12 to 25—and some people said the best way to do it is by using special tools like an antidetect browser and proxies. But I’m wondering if I can skip using proxies and just restart my router every time I log in to a channel to change the IP address.

The idea is to check each channel once a day. I would open the channel, upload a video, and then schedule it. After that, I’d restart the router to get a new IP address, then do the same thing for the other channels.

Does anyone know if this would work, or is there a better way to handle it?
 
You can use IPv6 proxies for YouTube, and they’re affordable to buy. You can also use ad power with an antidetect browser, which works well.
 
For an antidetect browser, you can use NST Browser. For a good proxy, try 923s6.
 
Antidetect browsers can help, but don’t forget to add several admin users to your channel.

Restarting your router or modem won’t give you a new IP address unless you have a dynamic IP from your internet provider.

What’s the reason for creating 10 channels? Why not just upload all the videos to one channel?

You should use proxies, especially good residential ones.
